No Eggs? No Problem!

Out of chicken eggs? Looking for plant based replacements? Chia and flax eggs to the rescue! The ratio of seeds to water is the same, no matter which base ingredient you choose.

Chia Eggs

1 Tbsp (15 ml) Chia Seeds + 2.5 Tbsp (37 ml) Water = 1 Egg

Whisk and let rest for five minutes

Flax Eggs

1 Tbsp (15 ml) Flaxseed Meal + 2.5 Tbsp (37 ml) Water = 1 Egg

whisk and let rest for 5 minutes

Choose your “egg” seed and then simply whisk it in water, let rest for five minutes and add to your baking and cooking wherever eggs are called for. It really is that simple!

This works well for any sort of baking, as well as for additions to most cooked dishes. However, dishes which are predominately egg-based, such as an omelette or scrambled eggs, are more difficult to duplicate flavour and texture-wise, with plant based eggs. For those interested in giving eggless omelettes a try there is a great recipe you can check out here.

While not typically grown in a garden, it is possible to grow both flax and chia and harvest the seeds yourself. Then when people ask what you are growing in your backyard or in your community garden plot, you can say, eggs!
